Benarasi Snack made with Poha, which is flattened rice. It's a perfect winter treat with sweet peas and garam masalas.

Ingredients
  

  • 1.5 cups Thick Poha
  • 1/2 cup Peas (fresh or frozen, fresh is better)
  • 1/2 cup Onions – thinly sliced
  • 1/2 tbsp Ginger Garlic Paste
  • 2 Green Chilies Chopped Finely
  • 1 tsp Salt
  • 1/2 tsp Sugar
  • 1/2 tsp Turmeric
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 3 Green Cardamom
  • 1/2 inch Cinnamon
  • 1 small Black Cardamom
  • 2 Cloves
  • 3 Black peppercorns
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 1.5 tbsp Ghee
  • a handful of Cilantro chopped

Instructions
 

  • In a colander, add the poha and soak it with enough water so that it's soft.
  • Sprinkle half of salt, sugar and turmeric and mix well.
  • In a kadhai, add in the 1 tbsp of ghee and add in the cumin and fennel seeds. Add in the cardamoms, cloves and blackpeppercorns.
  • Add in the sliced onions, green chilies, and ginger garlic paste. Saute it for 1-2 mins.
  • When the onions are translucent, add in the salt, red chilli powder, turmeric, coriander powder and garam masala.
  • Add in the peas and saute for 1-2 mins. Add in a few tbsp of water and cover and cook until the peas are soft. It till take 5 mins for frozen peas and 10 mins for fresh peas.
  • Once the peas are cooked, add in the Poha mixture and mix well, so all the masalas are coated on the poha. Add in the remaining ghee and cilantro and cover and cook for 2 mins.
  • Serve hot with a cup of Masala Chai!
