Egg Bhurji

A quick breakfast option or a light evening snack to be served on white toast or rolled up in paratha.

Can be served with ketchup, mayo, mustard, or Trader Joe’s Crunchy Chilli Onion oil!

Egg Bhurji

Equipment

  • 1 Frying Pan

Ingredients
  

  • 5 Eggs
  • 1 tbsp Ghee

Powered Masalas

  • 1/2 tsp Salt
  • 1/2 tsp Red Chili Powder
  • 1/4 tsp Turmeric
  • 1/2 tsp Coriander Powder
  • 1/4 tsp Cumin Powder
  • 1/4 tsp Chaat Malasa
  • 1/2 tsp Garam Masala

Veggies

  • 1/2 cup Onions chopped finely
  • 1/2 cup Tomatoes chopped
  • 2 Garlic Cloves chopped
  • 2 Green Chillies Chopped
  • A handful of Cilantro Chopped

Dried Masalas

  • 2 Green Cardamom
  • 3-4 Black peppercorns
  • 1 Dried Red Chili
  • 1 tsp Cumin Seeds

Instructions
 

  • Heat a frying pan, add ghee, add the Dried Masalas. Let them sizzle.
  • Add in the onions, chopped garlic, and saute for 2-3 minutes.
  • Add in the tomatoes, green chillies and saute for another 2-4 minutes.
  • Break the eggs in the pan and scramble them on the pan until they are cooked.
  • Add in the salt and other powered masalas and saute for another 4-5 minutes.
  • If the eggs seem dry, add olive oil and sprinkle cilantro.
  • Serve with toast and chai!
