Sabudana Khichdi

A quick and simple breakfast on a wintery morning or any time of the day. With some prep the night before, you can have a fabulous breakfast ready!

- 2 cup Sabudana
- 1/2 cup Coarsely crushed peanuts (you can reduce it to 1/4 cup or omit it altogether)
- 1 tsp Salt
- 1 tsp Sugar
- 3-4 small Green Chillies Chopped
- 1 tbsp Ghee (can be substituted with Olive Oil or Coconut oil)
- 1 tsp Cumin Seeds
- a handful of Cilantro Chopped (optional)
- 1 tbsp Freshly grated coconut (optional)
- a squeeze of lemon (optional)
The night before you want to eat, wash the sabudana with water once and soak it in enough water so the pearls are submerged in the water.
Drain the water and some salt, sugar and crushed peanuts. Mix well.
In a kadhai, add the ghee, green chilies, and cumin seeds. Saute it for a few minutes.
Add in the sabudana mixture to the kadhai. Saute it for 5-6 mins. Don't cook it too much or the sabudana pearls will stick to each other.
Sprinkle some cilantro, coconut and squeeze some lemon! Enjoy with a cup of chai!
